Broccoli Cheddar Soup
A classic soup filled with cheesy goodness and vegetables.

INGREDIENTS
3 cups broccoli florets
1 large carrot
2.5 cups vegetable stock
(bouillon cubes)
2 cups grated cheese
2 cups whole milk
½ medium onion
2-3 garlic cloves
4 Tbsp. flour
3 Tbsp. oil
½ – 1 tsp. salt (to taste)
½ tsp. black pepper
¼ tsp. paprika or ground
nutmeg (optional)
INSTRUCTIONS
- Peel and chop the onion, and peel and mince the garlic cloves.
- Chop the broccoli into small, bite-size pieces.
- Peel and either finely chop or grate the carrot.
- Boil 2 cups of water and dissolve the bouillon cubes, stirring to fully dissolve the bouillon.
- Heat 3 Tbsp. of oil in a large Dutch oven or pot over medium-high heat.
- Add the chopped onion and minced garlic and sauté until softened and lightly golden.
- Add 4 Tbsp. of flour and gently whisk into the onions and garlic. This helps to thicken the mixture. Continue stirring until the entire mixture is golden in color.
- Add the bouillon broth, broccoli, carrots, and any desired seasonings.
- Bring the mixture to a boil, then reduce heat to medium-low and simmer the soup for 15 minutes, or until the broccoli and carrots are cooked through.
- Stir in the milk and the shredded cheese. Simmer the soup, making sure to heat it through and that the cheese has melted.
- Taste and adjust any seasonings as needed. Enjoy!

- Grab a round loaf of crusty bread to make an easy bread bowl. Just cut out a medium sized circle in the center of the bread, making sure to leave crust on the bottom. Use a spoon to scoop out the inside of the bread for a bigger bowl.
- Want a richer version of this soup? Try half and half instead of the milk and add potatoes, corn, and bacon to make this soup into a HEARTY chowder.
- Mix it up with different cheeses! Swiss cheese, extra sharp cheddar, or even bleu cheese are all great options.
