Broccoli Cheddar Soup

Broccoli Cheddar Soup

A classic soup filled with cheesy goodness and vegetables.

INGREDIENTS

3 cups broccoli florets
1 large carrot
2.5 cups vegetable stock
(bouillon cubes)
2 cups grated cheese
2 cups whole milk
½ medium onion
2-3 garlic cloves
4 Tbsp. flour
3 Tbsp. oil
½ – 1 tsp. salt (to taste)
½ tsp. black pepper
¼ tsp. paprika or ground
nutmeg (optional)

INSTRUCTIONS

  1. Peel and chop the onion, and peel and mince the garlic cloves.
  2. Chop the broccoli into small, bite-size pieces.
  3. Peel and either finely chop or grate the carrot.
  4. Boil 2 cups of water and dissolve the bouillon cubes, stirring to fully dissolve the bouillon.
  5. Heat 3 Tbsp. of oil in a large Dutch oven or pot over medium-high heat.
  6. Add the chopped onion and minced garlic and sauté until softened and lightly golden.
  7. Add 4 Tbsp. of flour and gently whisk into the onions and garlic. This helps to thicken the mixture. Continue stirring until the entire mixture is golden in color.
  8. Add the bouillon broth, broccoli, carrots, and any desired seasonings.
  9. Bring the mixture to a boil, then reduce heat to medium-low and simmer the soup for 15 minutes, or until the broccoli and carrots are cooked through.
  10. Stir in the milk and the shredded cheese. Simmer the soup, making sure to heat it through and that the cheese has melted.
  11. Taste and adjust any seasonings as needed. Enjoy!

  • Grab a round loaf of crusty bread to make an easy bread bowl. Just cut out a medium sized circle in the center of the bread, making sure to leave crust on the bottom. Use a spoon to scoop out the inside of the bread for a bigger bowl.
