Summer Fun Popsicles

This Pantry Fresh meal kit is meant to be a fun and creative project for all households during the hot Summer months.
Prep time: 5-10 minutes
Cook time: Freeze overnight
Servings: 10 popsicles
INGREDIENTS
- Fruit Juice
- Canned Pears
- Canned Mixed Fruit
- Almond or Coconut Milk
- 10 Plastic Cups (to use as molds)
- 10 Wooden Popsicle Sticks
- Aluminum Foil or Plastic Wrap
Suggested Extras
Fresh Fruit: bananas, strawberries, berries, plums, peaches, nectarines, grapes
Spices: try adding cinnamon, cardamom or ginger to spice things up
Sweeteners: honey, maple syrup, vanilla extract and almond extract can all boost the flavors and give more sweetness if needed
INSTRUCTIONS
Popsicles can be made with any combination of the ingredients included. Some suggestions are:
- Pear and Almond Popsicle
- Empty the canned pears with juice into a blender or small bowl
- add ½ a cup of Almond milk
- Blend to your preferred smoothness
- pour into molds and add the popsicle, you can use aluminum foil to help hold up the sticks until the popsicles are completely frozen
- Fruit Cocktail Popsicle
- Open the can of mixed fruit, scoop a spoonful of the fruit into each popsicle cup
- Pour juice over the top of the fruit, you can add some of the juice from the mixed fruit to make your popsicles sweeter
- pour into molds and add the popsicle, you can use aluminum foil to help hold up the sticks until the popsicles are completely frozen
- Tropical Fruit Popsicle:
- Open the can of mixed fruit, scoop a spoonful of the fruit into each popsicle cup (try adding pineapple if you have some in your pantry!)
- Pour the coconut milk over the top of the fruit, you can add some of the juice from the mixed fruit to make your popsicles sweeter
- pour into molds and add the popsicle, you can use aluminum foil to help hold up the sticks until the popsicles are completely frozen
Need help removing your popsicles from the molds? Fill a cup or bowl with hot water and dip the outside of the cups in the water. This will slightly melt your pops and allow them to pop right out!
CARROT TIPS
- Go wild with your pops! Try fresh herbs for a unique taste – pear rosemary, strawberry basil, or orange lavender are all delicious options.
- Mix and match: create popsicles with juice and milk. If you fill half the cup with juice and freeze it, you can top it with a combination of fruit in milk for a two-in-one treat!
- Use your produce distribution to add even more fruit choices – on days that we have lots of fruit, you may even find some added to the meal kit!
