Cilantro Rice Burrito Bowl

A hearty one-bowl meal with lots of ways to customize.

INGREDIENTS
- 2 package Cilantro Rice Mix
- 1 can Black Beans
- 1 can Corn
- 1 Onion
- 1 package Cheddar Cheese
SUGGESTED EXTRAS
- Tortillas
- Tortilla Chips
- Fresh Tomatoes
- Jalapeno Peppers
- Sour Cream
- Salsa
- Cilantro
INSTRUCTIONS
- Prepare your ingredients:
- Open the can of black beans, rinse
- Open the can of corn, rinse
- To make the rice: Follow the instructions on the package. This mix can be cooked in the microwave or in a skillet.
- Depending on how you want to serve your burrito bowl, you can prepare the vegetables in a number of ways.

- You can combine the corn and black beans and heat on the stove or in the microwave until warm.
- If heating on the stove, stir regularly to make sure the beans and corn do not stick to the bottom of the pan. Heat for approximately 5 minutes.
- If using a microwave, heat the beans and corn for 1 minute. Remove the dish from the microwave and stir well. Return to the microwave and heat for another minute.
- You can heat the corn and black beans separately, in small bowls (microwave) or different pots (stovetop). Use the timing from above as a guideline.
4. Shred the cheddar cheese, as much or as little as you like
5. Once the rice is completely cooked, spoon 1 cup in each serving bowl.
6. For a fancy presentation, portion out beans, corn, and other garnishes into individual sections of the bowl. Or add all the ingredients and enjoy!
7. Top with shredded cheese.
