Pearl Couscous Salad
Delicious pearl couscous pasta with a variety of vegetables.

INGREDIENTS
- 1 package pearl couscous
- 1 can white beans
- 1 can sliced black olives
- 1 red onion
- 1 cucumber
- 1 package cherry tomatoes
- 1 head garlic
- 1 bunch parsley
- 2 packets dijon mustard
- 1 lemon
- Salt and pepper
- Oil
SUGGESTED ADD-INS
- canned tuna or salmon
- canned artichoke hearts
Prepare your ingredients:
- Open the can of white beans. Drain off the liquid and rinse with water.
- Open the can of olives; drain off the liquid.
- Peel the cucumber. Slice lengthwise into quarters and chop.
- Peel and finely chop 3 garlic cloves.
- Slice the cherry tomatoes in half.
- Peel the onion and slice it in half, cutting off the woody ends. Slice the onion into thin strips.
- Rinse, dry, and finely chop the parsley.
- Slice the lemon in half
Prepare the salad:

- Cook the pearl couscous:
- Two cooking methods are listed on the back of the box – choose the option (stovetop or microwave) that works best for you. Each box contains 4 bags of couscous. 1 bag equals 2 servings – make as much as you need. Allow to cool after cooking.
- Make the dressing:
- Using scissors, cut the tops off both packets of Dijon mustard. Add to a bowl.
- Add the finely chopped garlic.
- Squeeze both halves of the lemon directly into the bowl.
- Add ¼ cup of oil – olive oil keeps with the theme of the recipe, but canola oil works just as well.
- Whisk the ingredients together until completely combined.
- Cook the pearl couscous:
Create the salad:
- To assemble the salad, you can make each bowl individually or in one large bowl.
- Begin with the couscous, creating the base of the salad to build on.
- Add each of your prepared ingredients – have fun with this part. Group colors together, create patterns with different shapes – bring your salad to life!
