Potato Gnocchi with Mushroom Cream Sauce
Homemade potato pasta with a delicious mushroom cream sauce.

Servings: 4-6
INGREDIENTS
To make the gnocchi:
• 2 cups instant mashed potatoes
• 2 cups boiling water
• 1 cup flour (with some extra if needed)
• salt and pepper
To make the sauce:
• 1 can of cream of mushroom soup
• 1 package of mushrooms
• 1 package of frozen peas
Other ingredients you will need
• Butter or Oil

INSTRUCTIONS
TO MAKE THE GNOCCHI
1) Measure potato flakes and place into a large bowl.
2) Add the 2 cups of water and mix into the potato flakes until smooth.
3) Add salt and pepper to taste.
4) Cover the bowl and place it in the refrigerator for 15 minutes
5) Remove the mixture from the fridge and add 1 cup of flour
6) Work the flour into the potato mixture by hand until it is fairly stiff. Add more water or flour if needed.
7) Once the ingredients are mixed, form a ball with dough and recover. Let sit for another 15 minutes.
8) After 15 minutes, uncover the dough and divide it into four even pieces.
9) While the dough is resting, boil a large pot of salted water.
10) On a lightly flour dusted surface, take each portion of the dough and using your hands, roll into a long thin snake shape, about 1 ½ inch thick.
11) Take a knife and slice 1 inch pieces from rolled out dough.
12) In small batches, drop the 1 inch pieces of gnocchi into the boiling water. After about 45 seconds to 1 minute, the gnocchi will float to the top of the pot. Remove the gnocchi with a slotted spoon.
TO MAKE THE SAUCE
13) In a saucepan, melt the butter or heat the oil.
14) Clean and slice the mushrooms. Add to the heated oil or butter.
15) Sautee the mushrooms for around 5 minutes.
16) Add ½ the bag of frozen peas (or more if you like) and cook for around 1 minute.
17) Add the cream of mushroom soup. Use the same can and add half a can of water.
18) Simmer the sauce for 5 – 10 minutes, until the frozen peas are cooked and the sauce is well heated. Season with salt and pepper as needed.
TO SERVE
19) Top the gnocchi with the mushroom cream sauce.
CARROT TIPS
• Use the gnocchi but switch the sauce. A simple red sauce, pesto or even butter tastes great!
• Top with parmesan cheese, parsley, or oregano
• Sautee the mushrooms in garlic or your favorite herbs/spices to add more dimension to the sauce
