Turkey Chili

A delicious mix of veggies, meat, and beans for a hearty Winter meal.

INGREDIENTS

  • 1 Onion
  • 1 Green Pepper
  • 1 can of Kidney Beans
  • 1 can of Black Beans
  • 1 packet of Chili seasoning
  • 1 can Diced Tomatoes
  • 1 lb Ground Turkey OR 1 package of vegetarian Beef Crumbles1 Onion
  • Cooking oil
  • Water

SUGGESTED ADD-INS

  • Other beans – chili beans, pinto beans, pink beans
  • Canned corn
  • Canned carrots
  • Hot pepper – dried or fresh
  • Unsweetened cocoa powder (Yes! Really!)
  • Masa harina (corn meal) to thicken the chili

Prepare your ingredients:

    1. Peel and dice the onion
    2. Slice the pepper in half, remove the seeds and the white pieces. Dice into small pieces.
    3. Open the can of kidney beans, drain off the liquid and rinse
    4. Open the can of black beans, drain off the liquid and rinse
    5. Open the can of diced tomatoes

Make the recipe

      1. Begin by cooking the ground turkey or vegetarian crumbles.
        1. In a large pot, sauté the beef until it is cooked through. Using a colander or the lid of a pan, drain off the fat from the cooked beef. Remove the beef for now.
        2. If using vegetarian crumbles, follow the instructions on the bag based on the way you’d like to cook the protein.
      2. Using the same large pot, add 1 tsp oil and heat on med-high.
      3. Add the onion to the heated oil and sauté until the onion is translucent.
      4. Add the diced tomatoes to the pan, stir well and heat for 1 minute.
      5. Add the packet of chili seasoning, stirring well until it has dissolved into the tomatoes and onions.
      6. Add the meat or vegetarian crumbles that you previously cooked, stir well.
      7. Add half to a full cup of water now if you’d like your chili more like a soup and less a thick stew.
      8. On medium-high heat, let the chili cook for at least 30 minutes. This recipe can cook longer to increase the flavor, especially if you’ve added hot peppers or other seasonings.
      9. Serve with shredded cheese, sour cream, fresh cilantro or fresh jalapeños on top.

CARROT TIPS

  • Chili recipes are infinitely changeable – use white beans and chicken for a lighter version.
  • Spice things up with ancho chiles or chipotle peppers
  • For a rich and unique twist add cocoa powder and cornmeal to thicken the chili and deepen the flavors
  • Canned corn, canned carrots, fresh celery and garlic are all great additions to increase your daily portion of vegetables.
